Born and raised in Chicago, Whitman Kam is a second-generation Chinese food chef and a graduate of Le Cordon Bleu and hospitality management at the University of Illinois. Trained by his father who ran two Chinese take-outs in the South Side of Chicago, Whitman has developed a talent for food, especially in regional Chinese and American comfort. In 2015, he sold both restaurants in pursuit of his vision, a contemporary take on Chinese regional cuisine. While spending a year traveling and researching, he fell in love with the bold flavors of street fare and the nuance flavors of the Northern regions of China. He now brings his culinary vision to the streets where he aspires to share his passion for Chinese regional cuisine.
ANTHONY LEO NOLAZCO
Growing up in the West Suburbs of Chicago, Anthony did not discover his love for food and cooking until 2011, when he left college to pursue his dream of working in a hot and sweaty kitchen. He started this journey at Le Cordon Bleu where he would meet Whitman. He then worked for Bill Kim of Belly Q and Urban Belly, where he learned to balance sweet, sour, salty, bitter, and umami. He then furthered his experience at the Girl and the Goat, mastering the art of butchery for newly crowned Chicago's own Iron Chef Stephanie Izard. After disappearing from the culinary scene for the last two and a half years, he has returned to team up with Whitman to create the ultimate mobile dining experience.

(Do not be fooled by her cool demeanor. Penny Kam has a long history of eating good food made by Chef Kam. Although she doesn't mind kibbles on a regular basis, she prefers to beg for human food as well. She also makes a very good guard dog, which also means that she guards food in her stomach. Would pet 13/10.
